No-Knead Bread

不用揉麵的麵包,大成功!Success!




Didn't think I'll have time to mess with the oven and make bread after having Lynn... but we saw on TV last night this "no-knead" bread recipe, I googled it right away. Here's the recipe from NYT. (We don't have a dutch oven and used clay pot instead. Worked beautifully.)
有了孩子之後想說不會有時間烤麵包了,不過昨天在電視上看到有不用揉麵的麵包食譜,立刻就上網查個仔細。昨晚就立刻和麵放隔夜,早上起來繼續照步驟二次發酵後烤來吃。不過我們沒有 dutch oven,用熬湯的陶鍋來烤,效果讚讚讚!

The result: crispy on the outside while moist, fluffy and chewy on the inside. We used high-gluten flour 'cause we need to use up the big bag we bought earlier, but bread flour or even all-purpose flour will work just fine, according to the recipe.
烤出來的成果:外皮脆,裡面鬆軟又有嚼勁。這次用的是特高筋麵粉,因為之前買了一大袋得趕快用完,不過食譜上說用高筋或中筋都可以。

沒想到做麵包也可以這麼輕鬆。讚!已經開始想在這個麵包食譜上動手腳了,加上 garlic, onion, cheese 粗鹽、或是其他香料,就成了 focaccia bread,說不定也可以改良成 naan 拿來配我最近找到食譜的 curry lentil stew,喔耶!
